Also I would totally try the shrimp and orzo sheet pan meal because it sounds awesome except the rest of my family don't eat shellfish. Sometimes cooking for other people is totally lame. They also don't like mushrooms. Can you imagine!
ahh alas! I suppose you could omit the shrimp and double the chickpeas or replace with another relatively thin/quick cooking protein – like some lemon sole filets or thin chicken breast (maybe with a little extra fat/seasoning and some bread crumbs), maybe? or even boneless chicken thighs placed on the pan at the same time as the tomatoes and chickpeas!
